SAFFRON COOKED BEEF TENDERLOIN
WITH CHEESE

Ingredients:
1 kg. of beef tenderloin.
White wine.
2 leeks.
40 gr. of butter.
100 gr. of onion.
2 gr. of Spanish Delight Brand saffron.
150 gr. of sheep cheese.
150 gr. single cream.
Salt and pepper.

Clean and mince the onion and the leeks. Next saute them in
butter until they are golden brown. After that add some white
wine until it boils down. Once the onion is sauteed add the
cream, bring to the boil and let it reduce a bit. Cut the cheese
down to pieces and add it to the mix. Stir until we get a
uniform sauce. Add the saffron threads and mix in the
thermomix. Season and put aside. Finally, scatter some saffron
threads on the sauce and serve.
